Southern Fried Okra

Breaded and fried. I know it's not the healthiest way to eat, but it sure does taste good.  Besides, we all need a break from monitoring everything we put in our mouths sometimes.  It's an easy addition to most of our meals.  Even if your not an okra fan, you may find this to be surprisingly tasty.  

Recipe

1 28-32oz bag of frozen okra
1 cup yellow corn meal
1 cup unbleached, all purpose flour
1/2 tsp. iodized sea salt
canola oil (enough to cover bottom of frying pan up to approximately 1/4")

  • Allow frozen okra to completely thaw.
  • Combine remaining ingredients except canola oil, in a large bowl, preferably one with a lid.
  • Add canola to large frying pan and warm on medium to medium high heat.
  • Add okra to cornmeal mixture, cover bowl completely, and shake to evenly coat okra.
  • Add coated okra to pan in batches and fry until golden brown, approximately 3-6 minutes on each side.
  • Drain on paper towels.
